Chipotle Honey Vinaigrette
½ cup red wine vinegar
¼ cup honey
2 chipotles in adobo + 1 T adobo sauce (for medium spice)
4 cloves garlic
1 t oregano
1 t cumin
1 t salt
½ t pepper
½ lime, juiced
Splash of water
¾ cup olive oil
¼ cup honey

- Blend all except the olive oil in a blender
- Slowly add oil with blender on high to emulsify the dressing
Yield: 16 oz.
