Buckeyes

2 cups
13 oz
¼ stick
1 t

1 ¼ lbs
creamy peanut butter
powdered sugar
butter
vanilla

  • Mix first set with your hands to form a dough
  • Roll into 1-inch balls and chill on a wax paper or parchment lined cookie sheet
  • Microwave 3/4 of the chocolate at 50% power until mostly melted, stirring a few times while you go.
  • Stir in the rest of the chocolate and stir until melted, microwaving in 5 second increments if needed.
  • Use a toothpick to stab and dip most of each ball in the chocolate and return to cookie sheet.
  • Chill in the refrigerator if necessary.
  • Yield: 70 balls
