Cucumber Salad

distilled white vinegar or rice vinegar
salt
cucumber, sliced
red onion, slivered
serrano chiles sliced thin
lime juiced
cilantro

chopped peanuts

  • Dissolve the sugar in hot water and cool. Add all the remaining ingredients and serve within a few hours to keep the cucumbers fresh. Garnish with a sprinkle of chopped peanuts.
  • Serves: 10 as a condiment
  • Thai name: Yam Taeng Kwa
