Fiery Beans and Pork
- Slice the chiles open and discard most of the seeds. Break into pieces and soak in warm water until soft. Blend first set to a paste and set aside.
- Cut the string beans into 2 to 3 inch piece and slice the pork to look like the beans. Fry the pork and remove. Fry the beans for a few minutes and then add a small amount of water and cover until they are almost done. Add the pork, chile paste, and basil and fry for 2 more minutes.
- Serves 6 as a side dish
