Frosted Pumpkin Cookies

Frosting
½ cup
¼ cup

1 cup
¾ t

butter softened
sugar
brown sugar

egg
pumpkin (canned)
vanilla

flour
baking powder
baking soda
salt
cinnamon
nutmeg
powdered ginger

chopped pecans or walnuts (optional)
raisins or dates (optional)
mini chocolate chips (optional)


brown sugar
milk
butter

powdered sugar
vanilla

Cookies
  • Beat first set with mixer until light and fluffy
  • Stir in 2nd set
  • Combine 3rd set and gradually stir into wet ingredients.  Mix well
  • Mix in some of the optional items
  • Bake on a lightly greased sheet for 10 minutes at 375
Frosting
  • Dissolve first set over low heat, stirring constantly
  • Remove from heat and beat at low speed with remaining ingredients until smooth and spread over cooled cookies.
