Smothered Cabbage

1 head
2 T
1½ t
¼ t

1 T
1 can
¼ t
½ cup

1½ cups
½ t
2 T
cabbage
ghee or butter
cumin
turmeric

ginger
diced tomatoes, drained
crushed red pepper
water

frozen peas
salt
cilantro

  • Quarter cabbage and remove core.  Cut or shred into ¼-inch thick strips
  • Lightly fry cumin in hot ghee to dark brown (10-15 seconds)
  • Add shredded cabbage and turmeric and cook until fairly wilted (5 minutes)
  • Add 2nd set and simmer, covered, until almost done (15 minutes)
  • Add peas and salt and cool until peas are done (5 minutes)
  • Add cilantro and serve
  • Yield:  6 to 8 as a side dish
